Mini-Size Carrot Cupcakes w/ Cream Cheese Frosting

Got bored so used box carrot cake to make a batch of mini cupcakes. I enjoyed decorating the cupcakes but I'm not happy at all with how they turned out or the whole baking experience. First failure is the frosting. I wanted to use a piping bag on the frosting but couldn't. The frosting was too soft and didn't hold up well using a star tip. Second I found the frosting recipe online and didn't make note of the recipe number so now I can't leave feedback. Third is my mini cupcake pan. It's a weird shape and doesn't hold a standard mini cupcake paper well. You can't see the detail in the pics, but if you look at the cupcake it spreads out on the top. This is because my mini pan isn't deep enough. I'll probably get a new one eventually.



As you can see below, there is no definition to the frosting. I wanted my cupcakes to look like the ones that come from a bakery. These did not.

Trilevel Brownies

These brownies bring back good memories of when I was a kid. My American Granny gave us a cookie cookbook when I was a kid. It's the Better Homes and Garden Cookies & Bars book. We made these back then and I haven't made them in YEARS! Picture quality isn't that great but the three levels are: rolled oats/flour mixture, brownie w/walnuts & chocolate frosting.

Buster

Buster's Bio: Buster was adopted from the Oregon Humane Society when he was about 6 years old. He is definitely the Alpha of the two. Independent and a bed hog (the two share a bed). Aside from the occassional bouts with skin and yeast problems (common for pugs), he is in great health. His favorite food is peanut butter.

Ally

Ally's Bio: Ally was listed in a local newspaper because her previous owner went off to college and couldn't take her. The owner's parents didn't have time to care for her. She's in excellent health and is sweet. Her favorite food: anything Buster is eating. :-)

First Post

Friends have been trying to talk me into starting a food related blog for years. I'm an amateur cook and wannabe baker. Here's a couple pictures of a cake I made for Halloween. I entered it into a work dessert contest and won first place! :-) Inspiration: found the gummy rats at the store and rat trap idea is courtesy of my friend Carrie, candy corn addition due to hubby.
